These are so easy to make ahead and then heat when you need them! Playing with the fillings is also a fun option for these naturally gluten free crepes.
This recipe is a jumping off point for me. I use this particular preparation of yams for SO MANY other dishes. It is the base that keeps on giving! I do make slight alterations sometimes to the sweetener, or other spices used, but, this basis is strong with the powers of flavor.

This turned out to be a slightly sweet, lightly spiced, buttery crumble. It has a hint of the tropics, but it is not overwhelmingly anything. It had such a lovely aroma while baking. Nuts, spice, citrus and just a touch of sweet. Warm with black coffee, you can't go wrong!
