Potato and Kale Pancakes
Let me start by saying, this is not a health food item. This is comfort food at it's finest! We could pretend that they are a little healthy because they have kale in them.....
This is a great way to use up the leftover mashed potatoes from your Thanksgiving dinner, or a good little something to make and put in the freezer for those nights when you don't want to cook.
POTATO AND KALE CAKES
2 cups leftover mashed potatoes ( or just cooled)
2/3 cup kale ( steamed or roasted) leftovers are great
1/4 cup flour
1/4 cup cream
1 egg
Pepper to taste
Salt if needed ( depends on your potatoes and kale salt level)
Butter, olive oil, or coconut oil for frying

Mash everything together . I like to use my hands to make sure all the bits of potato get broken up and everything is well mixed!
Heat one tablespoon of oil in a skillet. Scoop large, or small dollops of batter into the hot pan. smash into a pancake. Let cook on med heat for 1-2 minutes, until the bottom side is golden. Flip cakes, cook 2-3 min more. Serve with Chunky Romesco, maple syrup, sour cream, apple sauce β¦the list goes on and on!
These can be made in a large batch. They store and reheat very nicely. They can even be frozen and reheated directly out of the freezer! Just add a little time to your reheating period.
If made ahead of time. Heat in oven at 375 for 10 -15 min.
